Ingredients

  • 6 ounce goat cheese (chevre)

  • 3 tablespoon whipping cream

  • ¼ cup snipped fresh herbs* (oregano, thyme, rosemary, dillweed and/or tarragon)

  • 1 small shallot, minced

  • 2 teaspoon finely shredded lemon peel

  • 1 clove garlic, minced

  • Sea salt and freshly ground pepper

  • Whipping cream (optional)

  • Toasted baguette slices

Directions

  1. In a medium bowl crumble goat cheese. Meanwhile in a small chilled bowl, whip cream until thickened; stir into goat cheese.

  2. Stir in herbs, shallot, lemon peel, and garlic. Season to taste with sea salt and pepper. Thin with additional cream, if desired. Serve on toasted baguette slices.

Use smaller amounts of the stronger herbs like thyme, rosemary and tarragon.
