Strawberry Salad with Feta and Pickled Red Onions
This strawberry salad is the perfect example of how complex, bold, and delicious a bowl of greens can be. A peppery base of arugula is elevated with a variety of toppings including feta cheese, pistachios, pickled onions, fresh herbs, and of course, strawberries. A homemade vinegar and olive oil dressing marries the assortment of flavors for a salad that will excite your tastebuds and satisfy your hunger more than you'd expect.
How to Add Protein to a Strawberry Salad
If you shy away from salads because you don't think they're filling enough, consider adding a protein or two to this strawberry salad. Great additions include crumbled bacon, grilled chicken breast, hardboiled eggs, tofu, chickpeas, smoked or oven-baked salmon, and shrimp. Double up on the flavor by pairing two proteins, such as bacon and shrimp, eggs and chicken, or chickpeas and salmon.

1 large red onion

½ cup white balsamic vinegar

1 teaspoon sugar

½ teaspoon salt

5 ounce baby arugula

¼ cup fresh flat-leaf parsley, chopped

¼ cup fresh mint, chopped

2 pound fresh strawberries, hulled and halved or quartered

¾ cup crumbled feta cheese (4 oz.)

½ cup toasted pistachios

¼ cup olive oil
Directions

Pickle the Onion
Halve the onion lengthwise and thinly slice it into half-moons. Mix the vinegar, sugar, and salt in a medium bowl, then add the onion, stirring to combine. Let stand for 10 to 15 minutes.

Assemble the Salad
Meanwhile, arrange the arugula, parsley, and mint on a platter or salad plates. Top with strawberries, feta, pickled onions, pistachios, and, if you like, additional parsley and mint.

Make and Drizzle the Dressing
Stir the olive oil into the leftover pickling liquid, then drizzle it over the salad(s). Makes 8 servings.
