Strawberry-Mint Lemonade
Ingredients
-
6 cup water
-
1 cup sugar
-
3 cup sliced fresh strawberries
-
1 ½ cup chopped fresh mint leaves
-
8 - 9 lemons (1/2 tsp. zest, 1 1/2 to 1 3/4 cups juice)
-
Lemon slices
-
Ice cubes
Directions
-
For simple syrup: In a large saucepan combine 3 cups of the water, the sliced strawberries, and sugar. Bring to boiling, stirring until sugar dissolves. Reduce heat; simmer 5 minutes. Remove from heat.
-
Add chopped mint; cover and let steep 30 minutes.
-
Using a fine-mesh strainer, strain syrup to remove mint and berries. Let cool.
-
In a pitcher combine 3 cups cold water, the simple syrup, lemon zest, and lemon juice. Add lemon slices along with additional strawberry slices and mint leaves. Chill up to 4 hours before serving. Serves 8.
Test Kitchen Tip: For a sweeter, more kid-friendly version of this summertime sipper, you'll want to stick to the low end of the range (1 1/2 cups) of lemon juice.
