Grilled Pork and Pineapple
Ingredients

4 boneless pork top loin chops, cut 3/4 inch thick (about 1 1/4 pounds total)

¼ teaspoon salt

¼ teaspoon ground black pepper

1 pineapple, peeled and cored if desired

3 tablespoon orange marmalade

½ cup plain yogurt

¼ cup coarsely chopped roasted lightly salted cashews

Fresh thyme sprigs (optional)
Directions

Trim fat from pork chops. Sprinkle all sides of the chops with salt and pepper. Cut pineapple crosswise into 1/2-inch-thick slices; set aside.

For a charcoal or gas grill, grill chops on the rack of a covered grill directly over medium heat for 4 minutes. Turn; add pineapple to grill. Set aside 2 tablespoons of the marmalade. Brush chops and pineapple with the remaining 1 tablespoon marmalade. Grill for 3 to 5 minutes more or until chops are slightly pink in center and juices run clear (150°F) and pineapple has light grill marks, turning pineapple once halfway through grilling time. Let chops rest for 3 minutes before serving. Cut pineapple into small wedges.

Arrange pineapple and chops on serving plates. In a small bowl combine yogurt and the reserved 2 tablespoons marmalade. Spoon yogurt mixture over chops and pineapple; sprinkle with cashews. If desired, garnish with fresh thyme.
